The [TOYS] collective has expanded beyond NSW state lines, to incorporate exciting
chefs, sommeliers and front of house crew from the Melbourne scene.
This December, Carlton’s Embrasse Restaurant will host Melbourne’s first [TOYS]
Collective event, featuring Nic Poelaert (Embrasse), Daniel Wilson (Huxtable),
John Paul Twomey (Cutler & Co) & Aaron Turner (Loam), in addition to Sydney
chefs Morgan McGlone (Flinders Inn) & Darren Robertson (ex-Tetsuya’s)

A collective born from the desire to prove what the next generation are capable of
when left to their own devices, Taste of Young Sydney [TOYS] is about action;
pushing the culinary envelope, rather than trash-talking the status quo.
2010 has seen [TOYS] present two dinners so far, showcasing the talent of chefs
such as Dan Hong (Lotus), Morgan McGlone (Flinders Inn), Mitchell Orr
(Josephine Pignolet Young Chef of the Year 2010), Darren Robertson (ex-
Tetsuya’s), Pasi Petanen (Marque Restaurant), Yu-ching Lee, and Adriano
Zumbo.

Thematically, [TOYS] aims to set down a challenging gauntlet for both chef and diner,
with previous themes being ‘Phat’, ‘Skin & Bones’, & ‘Bubbles’.
[TOYS] is not just about talented young chefs, the collective includes young
sommeliers Banjo Harris-Plane (Est.) and Richard Hargreave (Bilson’s),
bartenders Luke Ashton (Ivy Pool Bar) and Mitchel O. Bushell (The Corner
House), with front of house run by Kylie Javier (The Bentley Bar), Louise Tamayo
(Becasse), Erin Thomenny (Alira) and Chauncey Sjostedt (Berta), marketed and
organised by Melissa Leong (fooderati).

As the collective evolves, the line-up will change to reflect those within the industry that peers consider to be the most exciting, promising talent in the business: [TOYS] is a moving feast that promises to continue delivering exciting gastronomic events to Australia.
